Barbecuing has become one of Canada's favourite summer pastimes. It can be relaxing to barbecue after a long work day when a quick meal prepared on the grill not only tastes great, it is easy to clean up, but we don't often think about some simple steps that will help make the experience both fun and safe.

Safe Distances
Maintaining an adequate distance between the grill and the outside wall of the house is important to reduce the chance of fire. And, by all means, neither a gas nor charcoal grill should be used indoors, in closed garages, or on enclosed patios and balconies. Not only is fire a threat in these areas, the toxins released by the charcoal can be dangerous.

Placement
Other ways to avoid a fire are by making sure the grill is placed on a level floor so it won't tip, and set it away from any potential flammable objects such as cars, lawn mowers, gas tanks or compost heaps. Keep a clear walking path from the grill to the eating area so there is no danger of tripping and knocking down the grill. Always keep a fire extinguisher handy for any emergencies.

Maintenance
Gas grills require some maintenance before they are used for the first time each year. The hoses need to be cleared because insects can nest inside during storage, and old grease can accumulate and clot over time. Make sure there are no cracks or holes in the hoses and that all the connections are tight. And, when grilling, keep the hoses away from the heat.  When you are finished with the barbecue, store grills away from gas tanks and hot cars. Never store lighter fluid with matches.

Food Preparation
Another barbecuing concern is the preparation of the food, especially the problem of bacteria called E.coli. To avoid contamination, handle raw meat carefully. Keep it separate from other foods and never reuse a plate on which raw meat has been placed. Wash your hands in warm, soapy water after handling raw meat. Clean all surfaces and utensils that touch raw meat with hot, soapy water before placing other food on countertops or reusing the utensils. Meat should be thawed in the refrigerator or microwave oven, not out at room temperature. Cook the meat until its juice runs clear.

Insects
After you've grilled the perfect hamburger you'll want to relax and enjoy eating it. That means keeping the bugs away. There are some simple steps to help lessen insects' intrusion on your picnic. Keep sweets and sodas covered and capped and eat while it is still light to avoid mosquitoes in the evening when it is cooler. Use spray repellent and citronella-laced tiki torches to help keep the pests away.
